Healthy Salads for Your Barbecue this August Bank Holiday Weekend


This August Bank holiday weekend will be a sizzler here in the UK.  From the 23rd August to 26th August, people up and down the country, in restaurants, in pubs and in homes will all be encouraged to fire up the grill, filling the air with the smells and sounds of the end of summer vibes.

Seasonal Fruits and Vegetables for Healthy Salads in August


Garlic, asparagus, chard, carrot, cucumber, chicory, onion, bean, green bean, broad bean, courgette flower, mushroom, lettuce, potato, corn, aubergine, nettle, tomato, pepper, pea, rhubarb, radish, rocket courgette.

Sexy Summer salad


A crunchy salad topped with a zingy dressing makes for a lovely lunch or an accompaniment to your barbecue.

Serves 4



250g baby broad beans, pods removed

100g pomegranate

1 bunch radishes, trimmed, cut in half

100g fresh peas, pods removed

Small handful fresh mint leaves, torn

6 lemon balm leaves, torn (optional)

Small bunch fresh chives

Large handful fresh, young curly-leaved parsley leaves, chopped

1 Little Gem lettuce, or similar crisp lettuce, core removed, leaves separated


For the vinaigrette

2 tbsp white wine vinegar

2 tsp Dijon mustard

Pinch sea salt flakes

3½ tbsp olive oil

Salt and freshly ground black pepper


Step by step

Cook the beans in a lightly salted, boiling water for 2-3 minutes until tender. Drain well, then refresh in cold water.

Cook the carrots in a pan of boiling water for 3-4 minutes, or until just tender. Drain well, then refresh in cold water.

Place the cooked beans and carrots, the radishes, peas, mint leaves, lemon balm leaves (if using), chives, chopped parsley and lettuce leaves, into a bowl and mix well to combine. Set aside.

For the vinaigrette, whisk together the white wine vinegar, mustard, and salt in a bowl until smooth and well combined. Gradually whisk in the olive oil until the mixture has thickened slightly. and is glossy. Add freshly ground black pepper to taste.


To serve, drizzle the vinaigrette over the summer salad and mix well to coat the leaves.

Divide equally among four serving plates.


Lemon Green Beans


I bought these beautiful, fresh, very green beans at my local Farmers Market in Richmond upon Thames.

Serves 4



340g green beans

1 lemon

100g Almonds


Step by step

Preheat oven to 180 C

Place nuts or seeds in a single layer in an ungreased shallow pan or RIMMED baking sheet such as a cookie sheet or jelly roll pan. …

Bake 5 to 10 minutes or until they are GOLDEN brown. …

Remove from pan to cool.

Steam the beans for 2 1/2 minutes

Heat a medium frying pan with 1 tablespoon olive oil

Saute the beans in the oil for 2-3 minutes then add the juice of one lemon

Top with toasted almonds and lemon zest

A healthy side dish in under 6 minutes.  They look great, perfect for dinner guests.  And friends will ask you questions about them at barbecues – so just beware!
